lue Plate Restaurant Company opened its doors in the Highland Park neighborhood of Saint Paul on March 2, 1993. Two business partners, David Burley and Stephanie Shimp, saved up and sold their belongings to open the doors of Highland Grill nearly 30 years ago. They saw a missing opportunity in the neighborhood: breakfast. Today, signature breakfast items like the breakfast bowl and French toast are the cornerstone of Blue Plate restaurant’s menus, along with signature salads, tacos, burgers, craft beers, a wine list crafted by Shimp, and classic cocktails with a twist. Since the debut of Highland Grill, the duo of Burley and Shimp have opened restaurants, concessions, and even a food truck.
