Lollipop Lamb Chops Makes 4 appetizer portions
1 8 Rib Rack of Lamb
Cut the rack into 8 “lollipop” lamb chops. Season with salt and pepper. Grill chops on a hot grill until your preferred doneness. For rare, approximately 2 minutes per side. Medium, 3 minutes per side. Well, 4 minutes per side. I highly suggest medium-rare or medium.
When chops are at temperature, remove from the grill and let rest 2 minutes.
Arrange on the Arugula salad and drizzle with pomegranate molasses.
Arugula Salad
4 oz Arugula greens 1 tbsp red wine vinegar 1 tbsp pomegranate balsamic vinegar or regular balsamic vinegar 2 tbsp neutral oil (grapeseed or vegetable oil) 1 tsp Dijon mustard 1 tbsp chopped shallots Mix all ingredients except for Arugula. Toss greens with dressing; using as much or as little as you prefer. Divide greens among 4 plates. Place two “lollipops” on each plate. Garnish with pomegranate arils.
